Ingredients …

1 extra long English cucumber(seedless), sliced (approx. 3 cups)
1 small red onion, thinly sliced
2 cups sliced radishes
2 tbsp extra virgin olive oil

3 tbsp rice vinegar
1-1¼ tsp stevia (or sweetener of choice)
1 garlic clove, shredded with fine grater
½ – ¾tsp dry dill weed, or to preferred taste
salt & pepper to taste

Instructions…

*Combine the cucumbers, radish and onion in a large bowl.
*In a small, lidded bowl, combine the olive oil, vinegar, stevia, and garlic. Whisk or shake together well. (place lid on bowl and shake well).
*Add the dill to mixture, whisk or shake well to mix.
*Pour mixture atop vegetables (cucumbers, radishes, onions) and stir.
*Add salt & pepper to taste, if desired.
*Refrigerate for several hours (or even overnight if time allows) to allow flavors to ‘marry’ together.
