Simple Bacon Coleslaw Salad is a must have alternative to traditional coleslaw dishes! This mouthwatering salad adds bacon and cheese to the old-fashioned coleslaw recipe.

Although this dish is Keto & Low Carb friendly, it is absolutely wonderful for any diet and served as a side dish with any meal!

Ingredients …

6 slices bacon, fried (reserve 4 tbsp. bacon grease)
1/3 cup mayonnaise
1½ tablespoons apple cider vinegar (or rice vinegar if desired)
½ – ¾ tbsp yellow mustard
½ – ¾ tsp stevia

¾ tsp salt
1/4 tsp pepper
1/2 cup shredded sharp cheddar cheese
1 lb coleslaw mix, approx. 4c. packed shredded mix
2 tbsp yellow (or green bell pepper)
4 tbsp Vidalia sweet onions, chopped)

Instructions…

Fry bacon slices till crispy, place on paper towel to drain. Save 4 tbsp. bacon grease.
In a small bowl, mix; mayo, apple cider vinegar, mustard, stevia, salt, pepper and bacon grease till fully mixed.
Add cabbage, bell pepper, onion & cheese in a large bowl; mix together.
Pour the mayo mixture on the cabbage/slaw. Mix well.
May be served right away – or – Place in fridge for 2-3 hours for the best ‘marriage’ of flavors.
