Regardless of whether you are watching your carbs or not, blueberries should be something you are eating. They truly are a superfood, as well as truly delicious!

Best Keto Low Carb Blueberry Pancakes

Best Keto Low Carb Blueberry Pancakes

Ingredients …

8 tbsp butter, melted
1 tbsp coconut oil
1/4 cup water
4 eggs
1 tsp vanilla extract

Ingredients …

1 tsp baking powder
2 tbsp stevia
1⅓ cups blueberries
2 cups almond flour
pinch of salt

Instructions…

Place the ingredients in the order as listed above to a ninja, blender or food processor. (I used a ninja).
Pulse or mix until ingredients are fully incorporated. Batter will be thick! Set batter aside.
As the batter rests, place butter, olive oil, or coconut oil in non-stick skillet or on griddle on LOW heat.
Scoop ⅓ cup mix and place on skillet or griddle. Gentle tap down slightly/spread out the center to even out pancake.
Cook on LOW heat for 4 minutes. (These will burn before center gets done if cooked like a traditional pancake because they are thick.)
Turn pancake and continue cooking on LOW heat for an addition 2½-3 min. or until done.
May serve with sugar free syrup or butter if desired. (not figured into nutrition values below)
