Spinach Sausage Cheese Breakfast Muffins … Eggs, spinach, sausage, cheese – what else do you need for a superb breakfast muffin?!

When using the silicone muffin cups, these are a breeze to make and result in perfect muffins. They just pop right out of the muffin cups … but do let them cool before popping them into you mouth!

Just because these Spinach Sausage Cheese Breakfast Muffins are Low Carb & Keto Friendly doesn’t mean they aren’t good to eat even if you aren’t watching carbs. Give these are try, I hope you love them as much as I do!

Spinach Sausage Cheese Breakfast Muffins

Ingredients …

12 eggs
1 cup heavy cream
10 oz pkg of frozen chopped spinach, thawed and drained
12 oz. raw breakfast sausage
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground allspice, optional
1/4 cup extra sharp cheddar cheese, shredded
¼ cup mozzarella cheese, shredded

Instructions…

*Preheat oven to 375°.

*In a large bowl, beat the eggs and the heavy cream together. (May substitute ½ c heavy cream + ½ c unsweetened almond milk, if desired). Set aside.

*Squeeze/drain liquid from the thawed chopped spinach.

*Place sausage, salt, pepper and allspice (optional) in a medium bowl and mix well using hands.

*Add the spinach and the cheeses into the sausage mixture, again using hands to squeeze ingredients through fingers to mix.

*Add the egg & cream mixture in with the sausage and mix with hands.

*Dip mixture into silicone muffin cups to about 3/4 full.

*Bake for 35 minutes or until eggs are set and no longer ‘sloshy’.

*Extras may be frozen.
