Seems Difficult, but not!

Chicken Thigh Cheese Fajitas seem difficult to make, but really, they are not! These are so very delicious and I’m certain all who eat this recipe will fall in love!

Keto & Low Carb friendly. These can be served simply by themselves or with low carb tortillas.

Not watching carbs? No problems with this recipe! Simply wrap these delicious chicken thigh cheese fajita’s in a tortilla wrap of choice, or perhaps even place atop a bed of rice!

Chicken Thigh Cheese Fajitas

Ingredients…

4 large chicken thighs, remove bone & skin
2 Tbsp. Olive Oil
1 oz packet taco seasoning
2 Tbsp. butter
1 bag frozen pepper and onions, thawed
½-¾ cup shredded cheddar cheese
Salt and pepper to taste
Serve with sour cream, salsa or guacamole (optional)

Instructions…

*Remove bone & skin from chicken thighs.  Slice into strips.
*Heat olive oil in skillet. Add chicken thigh strips to oil and cook, browning chicken as desired. Sprinkle approx 1½ tbsp of the taco seasoning atop the chicken strips as you ‘fry’ them.  Remove cooked chicken from skillet, dispose of the remaining olive oil.
*Heat/melt the butter In same skillet.
*Drain the extra water from the thawed bag of frozen pepper and onions.  Add these to the butter in the skillet. You may need to adjust the heat up or down to cook the peppers & onions at least until warmed all the way thru, browning if desired.
*When peppers & onions are warmed thru, add the chicken thigh strips to the skillet.
*Sprinkle all but about 1½-2 tbsp. of the taco seasoning packet. (I saved this out for another recipe).
*I added a couple tablespoons of water to help mix the seasoning with the veg & chicken, you may need to add more or less.
*When everything is cozy warm/hot together and the taco seasoning is mixed in well, we’re about done!
*Turn off heat to skillet.
*Sprinkle cheese atop the mixture. Let it melt down slightly before stirring fajitas.
*Serve with sour cream, salsa or guacamole, if desired. (not in nutrition values below)
*Although I didn’t, you could also serve with low carb tortillas, or if not watching carb just use regular tortillas or perhaps even serve atop of a bed of rice. (tortillas and rice are not in nutrition values below)

Ingredients
