Avocado Bacon Egg Scramble
Nothing better than eggs, right?
I could eat eggs for breakfast, lunch and supper with no problems at all! To me eggs are at the top of the list of great foods, and they are so versatile to cook. This Avocado Bacon Egg Scramble recipe will not disappoint, I promise!

Avocado Bacon Egg Scramble

Ingredients …
4 slices fried bacon crumbled
4 large eggs
1/4 cup extra sharp cheddar cheese shredded & divided
1 avocado halved
salt & pepper to taste
Instructions…
*Fry bacon in skillet – set aside to cool. Leave approx. 1-2 tbsp. of grease in skillet. Crumble when cool enough to touch.
*Prepare/dice 1/2 of the avocado. {I just leave it in the ‘shell’ and run a sharp knife through the ‘meat’ part in one direction, turn and run the knife the other direction. Then when ready to add the eggs I use a spoon to scoop it out and gently separate as adding to egg mixture in skillet.}
*Place the eggs in a bowl and lightly beat (as per scrambled eggs).
*Add the crumbled bacon, 1/2 of the shredded cheddar cheese, salt & pepper to taste and place in warm, preheated skillet.
*Gently separate and sprinkle the diced avocado half onto the egg mixture.
*Scramble as per usual for scrambled egg to desired doneness.
*Divide the mixture among two plates and top with them remaining shredded cheese. Slice the remaining half of avocado and divide equally between the two plated scrambled eggs.
