Fried Cod Fish Fillets are a new twist on traditional fish fillets, using parmesan cheese and almond flour, and are delicious!

Keto & Low Carb friendly. Hey, are you thinking that this recipe won’t be good because you aren’t concerned about watching carbs? Think again!! These fillets are perfect whether you are watching carbs or not!

Ingredients …

4 cod fish fillets
Old Bay Seasoning with garlic
salt and pepper,  to taste
1 large egg
1 tablespoon heavy whipping cream (or almond milk)
1 c. almond flour

¼ c. shredded parmesan cheese
4 tbsp. flax meal
2 tbsp. butter
2 tbsp. coconut oil
2 tbsp. olive oil

Instructions…

*Rinse and pat dry the fish. Season both sides with the seasoning and salt & pepper. Set aside.
*In a medium flat bowl (one that you can dip the fish fillets in), lightly beat the egg with the heavy cream (or almond milk). Season with additional salt & pepper, if desired.
*In a medium flat dish (I used a round cake pan), mix the almond flour, shredded parmesan cheese and flax meal. Add a pinch of Old Bay Seasoning with garlic, mix up.
*Dip the fish into the egg mixture, shake excess off and then dip into the dry mixture.
*Place the butter, coconut oil, and olive oil into a large skillet and heat on medium temp.
*Add the battered fish to the heated oil and fry until golden brown and crispy. *Mine were pretty thick, so I cooked them for about 10 min. before turning. Turn fish a continue cooking for an additional 10 min.**

Notes …

**The cooking time will vary depending on how hot your skillet is and how thick your fish is. The fish should appear ‘flaky’.
