Beef Cabbage Egg Role …

Two of my favorite food, cabbage and ground beef … this dish is similar to a Runza casserole that I make & love; however, it doesn’t have some of the heavier carbs included. This is just as good, though! A favorite dish for us anytime.

Beef Cabbage Egg Role Recipe

Ingredients …

8 oz. Cole Slaw mix, bagged kind
2 cloves Garlic, grated or finely minced
Salt & Pepper to taste
2 tsp. Rice Vinegar
3 Tbsp. Lite Soy Sauce
3-4 stalks Green Onions, optional

Instructions…

*Brown ground beef until well done, adding salt and pepper and garlic about halfway through. Drain off half the fat.

*Add cole slaw to the beef and mix. Cook on low to med-low for about 5 minutes.

*Add rice vinegar & soy sauce. Stir well.

*Place lid on skillet and turn off heat. Let rest for about 10-15 min. to let flavors blend. NOTE: this process may be skipped, I just did it to ‘marry’ the flavors.

*Turn heat back on med to med-high heat, cook 4 to 6 minutes until the cabbage is rewarmed and begins to limp up – stirring often so it doesn’t burn/scorch.

*Season with salt and pepper to taste.

*Top with green onions.

Notes

If desired, you may use the entire bag of coleslaw mix. I did not because I wanted mine a little more ‘meaty’.
