Stuffed Spinach Artichoke Chicken Breast …

This recipe is super-duper easy … no need to go through all that hassle of making your own spinach artichoke dip – simple pick some up at your local store. I personally prefer the Spinach Artichoke Dip from Sam’s Club, but I’m sure you could grab some at any WalMart or even your local grocery store.

As easy as splitting your chicken breast and stuffing some Spinach Artichoke dip inside! Can’t get much more simple than that, right! I hope you love this recipe as much as we do.

Stuffed Spinach Artichoke Chicken Breast Recipe

(Free printable recipe below)

Ingredients …

1 extra large chicken breasts or 2 small breasts
1 cup prepared Spinach Artichoke Dip (I used from Sam’s Club)
¼ cup coconut oil (or olive oil)
salt & pepper to taste

Instructions…

*Split chicken breast in half so as to make a ‘pocket’.

*Stuff spinach artichoke dip into split chicken breast(s).

*I used two toothpicks to ‘close’ the top of the split breast.

*Season chicken breast with salt & pepper to taste.

*Heat oil in skillet.

*Add chicken breast and fry on med. heat until done or reaches 160°-165° internally.

*Remove from heat & let rest for about 4-5 minutes.

*Top with salsa, f desired.

*Remove toothpicks. I cut the extra large breast in half for 2 servings (my husband & I)
