PARADISE ISLAND DRESSING
(Makes 1 c.)
½ c. mayonnaise
¼ c. ketchup
2 Tbs. drained pickle relish
2 Tbs. fresh lime juice
½ tsp. kosher salt
Instructions…
Divide the ground beef into 4 even portions and shape each into a patty. Sprinkle both sides of each burger with some of the spice blend.
Place the oil in a large cast-iron skillet that can hold the burgers in a single layer (or work in batches or use two skillets). Set the skillet over high heat and turn your exhaust fan on. Once the skillet is smoking hot, place the burgers in the skillet and cook until the undersides are nicely browned, 2 to 3 minutes. Carefully turn the burgers and top each one with 2 slices of cheese. Cook until the second sides are nicely browned and the cheese has melted, 2 to 4 minutes more.
Divide the Paradise Island Dressing between the cut sides of the buns and spread to cover. Put 1⁄2 c. of the shredded lettuce on the bottom half of each bun and top with a cheeseburger. Top each cheeseburger with a couple slices of tomato. Top with the top buns and then close the burgers. Serve immediately with pickle slices alongside.
