Chipotle Barbacoa Beef Copycat Crock Pot Recipe

Chipotle Barbacoa Beef Copycat Crock Pot Recipe

Ingredients…

Marinade
5 chipotle chilies in adobo sauce
1 Tbs. adobo sauce
6 garlic cloves, peeled & smashed
1 c. beef broth
¼ c. red wine vinegar
¼ c. freshly squeezed lime juice
2 Tbs. Mexican oregano
1 Tbs. ground cumin
¼ tsp. ground cloves
1 tsp. kosher salt
1 tsp. cracked black pepper
Meat
Salt & Pepper
4 pounds chuck roast
2 large bay leaves

Instructions…

*Add all marinade ingredients to a food processor and puree until smooth.
*Sprinkle beef liberally on both sides with salt and pepper. In a large skillet over Dutch oven, heat olive or canola oil until shimmering. Add beef and cook until browned on one side, about 5 minutes. Flip the beef and continue cooking until the other side is brown, about 10 minutes total.
*Place the meat in a large crock pot. Pour the marinade over the meat, flip meat, making sure the meat is all coated well.
*Add bay leaves.
*Cook on high for 6 -8 hours, or until meat is easy to ‘shred’.

*Remove meat from crock pat to cool until you can shred the meat. Add marinade to shredded meat as needed to make the meat moist. Remove unneeded marinade and the bay leaves from crock pot.
*Return meat to crock pot set on warm and serve with alone or with a burrito/tortilla wrap.
