General Tso’s Chicken Copycat

Ingredients…

1 ½ lb. boneless chicken breasts
2 eggs beaten
salt & pepper to taste
½ c. cornstarch
½ c. flour
Canola or vegetable oil to fry
Sauce:
2 tsp. vegetable oil
2 tsp. minced fresh garlic (or ¼ tsp. garlic pwd.)
1 tsp. minced ginger (or 1/8 tsp. ground ginger)
½ tsp. crushed red pepper flakes or more to taste
¾ c. low sodium chicken broth
2 Tbs. hoisin sauce
2 Tbs. brown sugar
¼ c. low sodium soy sauce
1 Tbs. corn starch
Topping:
2 green onions thinly sliced, white and green divided
2 tsp. sesame seeds

Instructions…

*Cut chicken breasts into 1″ cubes. Beat eggs in a bowl, season with salt & pepper. Mix flour and cornstarch in a bowl.
*Preheat 3 inches of oil in a deep fryer or a deep skillet to 350°F.
*Dip chicken cubes, a few at a time, in the egg mixture, then in the flour/cornstarch. Repeat for all chicken pieces.
*Add half of the chicken in the preheated oil and cook until crisp and cooked through or until browned, about 5-6 minutes. Repeat with remaining chicken. Remove from the pan, set aside.
*While chicken is cooking, make the sauce;
*Heat the 2 tsp. of vegetable oil in a saucepan over medium heat. Add the minced garlic, minced ginger, whites from the divided green onions and crushed red pepper flakes and cook for 30 seconds.
*Whisk together the chicken broth, hoisin sauce, brown sugar, soy sauce and corn starch.
*Add the liquid mixture to the pan and bring to a simmer. Cook for 2-3 minutes or until sauce has thickened.
*Add the chicken to the pan and coat with the sauce. Sprinkle with sesame seeds and tops from the green onions and serve.
