Breakfast Scramble with Cilantro Salsa

Ingredients

  • 4 large eggs
  • 1 tbsp. almond milk
  • cup shredded cheddar cheese
  • 2 tbsp. cilantro salsa - I used the kind from Sam's Club
  • salt pepper, and pwd. garlic, to taste
  • Additional cilantro salsa & cheese for topping as desired
  • 1 tbsp Olive oil, coconut oil, or bacon grease for cooking eggs (I used bacon grease)

Instructions

  • Beat eggs and milk together in a small bowl.
  • Add cheddar cheese and salsa.
  • Add seasoning, if desired, to taste.
  • Heat oil (or bacon greasin a small skillet.
  • Add egg mixture to heated oil and 'scramble' to desired doneness.
