I do love deep fried zucchini and squash, but sometimes I don’t have enough oil on hand to make them. Thats where this Delish Baked Zucchini Fries recipe comes in handy.

Delish Baked Zucchini Fries

Ingredients …

2 medium Zucchini, fresh-raw
3/4 cup Grated parmesan cheese
1 large Egg
1/4 tsp Garlic powder
Salt & pepper to taste

Instructions…

Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
Place egg in a bowl and lightly beat.
Grate parmesan cheese in a pan that can dip the cut zucchini in. (I used a round cake pan). Add the garlic powder and the salt & pepper to the grated cheese, mix.
Wash each zucchini and pat dry. Cut zucchini in half lengthwise 4 times (to make eight long sticks from each squash). Then cut the sticks once crosswise, making 16 sticks from each squash, approximately 4 inches long and 1/2 inch thick.
Dip zucchini in the egg, shake off the excess, then dip into the parmesan mixture, coating all sides.
Place on the prepared baking sheet in a single layer without touching.
Bake for about 12-15 minutes, turn the fries and bake an additional 12-15 minutes, until golden and crispy.
