Regardless of whether or not you are watching carbs, these are a great vegetable side dish to try if you’re looking for something new.

Despite the fact of using radishes, baking really changes the flavor and completely tones down the ‘heat’ of a radish. I was certainly amazed the first time I tried these.

Consequently, even if you aren’t looking for Keto or Low Carb foods, this Baked Radish Potatoes Loaded recipe is a much healthier and equally delicious alternative to standard potatoes. That’s not to say that these will taste identical to that of a potato, because they aren’t potatoes – their radishes. Nevertheless, they are just as delicious in spite of being baked radishes.

And, to top it off, kids will like this, too! (You don’t have to tell them they are eating radishes if you don’t want – I won’t tell.) With bacon as a great addition, they will certainly like these as well.

Baked Radish Potatoes Loaded Recipe

Ingredients …

8 slices bacon
16 ounces round radishes
1 teaspoon salt
1 teaspoon pepper
2 cloves garlic grated (or minced)
¾ cup shredded mozzarella cheese
¾ cup shredded cheddar cheese
sour cream as garnish (if desired)
green onions as garnish (if desired)

Instructions…

*In skillet, fry bacon till crisp. {Save a couple tablespoon of the bacon grease.} Set bacon on paper towel to cool. When cool, crumble into pieces.

*While the bacon is frying, wash and trim the ends off the radishes. Cut into quarters. Pat dry.

*Add the radish quarters to the 2 tbsp of saved bacon fat in skillet; and season with salt and pepper.

*Stir and cook on until fork tender and crisp on the edges. This can take quite a while, depending on the size of your radishes to begin with.

*Preheat the oven to 400° and grease an 8×8 baking pan with butter or cooking spray.

*Once radishes are fork tender, stir in the grated garlic and cook an additional minute. Place radishes in prepared baking dish.

*Top the cooked radishes with the bacon crumbles and both of the cheeses.

*Bake in the oven for 15-20 minutes, until cheese is golden brown and bubbly.

*Remove from the oven, and allow to cool for 5 minutes before serving.

*Top with additional cheese, green onions and sour cream as desired.
