Yes! These low carb blueberry muffins are made with coconut flour and almond flour. And absolutely, they are delicious.

Low Carb Blueberry Muffins Recipe

Ingredients …
1 cup almond flour
½ cup coconut flour
2 tsp baking powder
½ tsp salt
4 tbsp butter, melted
Ingredients …
6 eggs
¼ cup + 2 tbsp. water
1 3/8 heaping teaspoons stevia
¼ tsp maple extract, (better with lemon extract)
1 1-1/4 cup blueberries, or less for fewer carbs
Instructions…
Preheat oven to 350 degrees.
Spoon batter equally into 6 muffin cups. Bake for 30 minutes or until lightly brown.
Fold in blueberries.
Mix dry ingredients into wet ingredients and stir until well combined.
In separate bowl, whisk eggs, butter, water, erythritol, stevia and lemon extract.
Mix almond flour, coconut flour, baking powder and salt in small bowl. Set aside.
Cool in pan 5-10 minutes then remove from pan and cool muffins on rack.
