Chicken Parmesan Lasagna

No Need to Boil Those Noodles!

I just love using oven-ready lasagna noodles! Why on earth would I want to mess around with boiling the noodles first?  That just gets another pan dirty! I’m all for ‘simplified’ as I can get recipes.
We all have busy lives, therefore; anything we can use to make cooking great meals easier is alright by me!

This Chicken Parmesan Lasagna is easy to make.  Not only is it simple to make, but also easy to switch around ingredients as you desire. You could try using alfredo sauce in substitution for the spaghetti sauce.
I personally like using the chunky vegetable spaghetti sauce in place of regular spaghetti sauce.  

Need to sneak in a little extra vegetables without your kids realizing it?  Add a can of ‘canned zucchini’ – it’s wonderful! 

You can used leftover chicken!  Have some left over chicken breasts? Chicken thighs? Rotisserie chicken?  Just shred it or chop it as you desire and add it!

Don’t like ricotta? Try using cottage cheese in it’s place! I do!! I do like ricotta, however, cottage cheese is cheaper – at least where I live.  I not only like easy recipes – I like them ‘cheap’ too!

Chicken Parmesan Lasagna Recipe

Delicious, quick and easy lasagna recipe using no boil noodles!

Ingredients ...

1 (9-ounce) box frozen creamed spinach
1 (15-ounce) container ricotta cheese
1 (24-ounce) jar spaghetti sauce of choice
7 pieces ‘oven-ready’ lasagna pieces (no boil)

1 lb. shredded chicken breasts or thighs (or desired amount)
6 slices mozarella cheese
1/2 cup grated Parmesan cheese

Instructions ...

Preheat oven to 350 degrees. Coat a 9 x 13 inch baking dish with cooking spray.
Microwave spinach as directed by instructions on package. Drain as needed.
Combine spinach and ricotta in a bowl.
Mix shredded chicken with with spaghetti sauce.
Pour 2/3 cup chicken spaghetti sauce in baking dish. Top with 3-1/2 lasagna noodles – I break one in half and place this it centered at the end in the opposite direction as the longer 3.
Spread half the spinach ricotta mixture over noodles, then the mozzarella slices, and 1/2 the remaining sauce. Place remaining noodles on top, placing the 1/2 piece at the opposite end as did the first layer.
Add the remaining spinach mixture, and the remaining sauce to this layer. You may add additional mozarella cheese, if desired. Sprinkle top with Parmesan cheese, then cover with foil.
Bake 30 minutes, then uncover and bake 15 additional minutes.

Notes:
Try these substitutions:
You can substitute Alfredo sauce in this recipe.
You can substitute cottage cheese for ricotta cheese in this recipe.
You can add canned zucchini for added vegetable content.
