Applebee Oriental Chicken Salad Copycat

Applebee Oriental Chicken Salad Copycat

Ingredients…
Dressing
3 tbsp honey
1 ½ Tbs. rice wine vinegar
¼ c. mayonnaise
1 tsp Dijon mustard
1/8 tsp sesame oil
Fried Chicken
2 chicken breasts
1 egg
1 c. milk
1 c. all-purpose flour
1 c. panko
1 tsp salt
¼ tsp pepper
3 c. vegetable oil for frying
Salad
4 c. romaine lettuce, chopped
½ c. red cabbage, chopped
½ c. napa cabbage, chopped
1 carrot shredded
3 Tbs. sliced almonds
Instructions…
*Blend together the ingredients for the dressing in a small bowl with a mixer. Place in refrigerator to chill while preparing remaining ingredients for the salad.
*In a large saucepan or deep fryer preheat oil over medium-high heat to around 350° F.
*Cut your chicken breasts into several long thin strips. Set aside.
*Beat egg and milk together in a small bowl.
*In a separate bowl, combine the flour, panko, salt and pepper.
*Dip the strips in the egg mixture, and then into the flour, coating completely.
*When oil is hot, carefully add chicken strips and fry for 3-4 minutes or until cooked through or golden brown. Set on a paper towel to cool. Once cool, cut into bite size pieces.
*Mix the salad ingredients together.
*Place in layers on a plate; salad, chicken and top with dressing.
