Ingredients
4large eggs
1tbsp.almond milk
⅛cupshredded cheddar cheese
2tbsp.cilantro salsa - I used the kind from Sam's Club
salt, pepper, and pwd. garlic, to taste
Additional cilantro salsa & cheese for topping, as desired
1tbspOlive oil, coconut oil, or bacon grease for cooking eggs (I used bacon grease)
Instructions
Beat eggs and milk together in a small bowl.
Add cheddar cheese and salsa.
Add seasoning, if desired, to taste.
Heat oil (or bacon grease) in a small skillet.
Add egg mixture to heated oil and 'scramble' to desired doneness.
