My husband loves spaghetti and asks for it frequently.  While I like spaghetti also, I do like to try new recipes or ‘mix’ up a traditional dish that tends to begin to bore me.

However, Grandpa (my husband) gets easily upset when I ‘mess’ (his words!) with tried and true traditional recipes – after all, they work and are good as they are, according to him.

Firstly, since he has a tendency to be a wee bit stubborn, he had made up his mind he was not going to like it before it came out of the oven. Consequently, this is as he does with many dishes I ‘mess’ with.
Notwithstanding of his original preconception of this casserole, guess what!! He liked it!

Now, I admit, sometimes messing with an ‘old fashioned’ or ‘traditional’ meal sometimes backfires on me but it won’t stop me from continuing to experiment.  This was another dish that I was glad I did make to get an occasional break for the basic spaghetti and meat sauce dish.

Additionally, as I often do, I tested this Spaghetti Casserole out on other family members.  My eldest daughter, her husband and the grand kids all approved of this as well – therefore, I will officially consider this to be a hit! My son-in-law even wanted the recipe for it.

Spaghetti Casserole

Bored with regular spaghetti and want to try something new? This Spaghetti Casserole Recipe provides a twist on traditional spaghetti meal with a surprising creamy center!

Ingredients

Meat Base

  • 1 pound ground chuck
  • 1 small onion, chopped
  • 1 26-ounce jar spaghetti sauce

Pasta

  • 8 ounces uncooked spaghetti

Layer Base

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 12-ounce can evaporated milk
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 cups 8 ounces shredded sharp Cheddar cheese, divided in half

Instructions

  • In large spaghetti pot or dutch oven, cook your spaghetti according to package ‘al dente’ directions. Drain
  • As the spaghetti is cooking – cook hamburger and onion together in a skillet until hamburger is browned/no longer pink. Drain as needed.
  • Add spaghetti sauce to meat/onion mixture and simmer for a couple of minutes. (may add a little water if needed).
  • Pour meat mixture into the cooked spaghetti in your spaghetti pot/dutch oven. Set aside, keeping warm.
  • Preheat oven to about 375.
  • Melt butter in a saucepan over low-medium heat. Whisk in flour, stirring constantly, cook for about 1-1/2 -2 minutes. Gradually whisk in milk while stirring constantly; cook 3-5 minutes or until thickened. Remove from heat.
  • Add Parmesan cheese, salt, and pepper.
  • Place half of the spaghetti hamburger mixture into a lightly greased 7 x 11 baking pan.
  • Spread milk-cheese sauce over this layer. Sprinkle 1 cup of the shredded sharp cheddar cheese Add a little bit of extra parmesan, if desired,
  • Place remaining half of spaghetti hamburger mixture on this layer.
  • Finish off with a sprinkle of parmesan cheese (if desired) and the remaining cheddar cheese on top of this layer.
  • Bake until cheese melts and middle is warm.
  • Baking times will vary depending how warm or cool the spaghetti mixture is at the time of placing in oven, but usually 15-20 minutes is enough.

Notes

Like it spicy? Try using some pepper jack or horseradish cheese, either in place of the cheddar cheese or a mixture of these cheeses! Or substitute whatever cheese is your favorite!
