Hey, do you love Reuben sandwiches as much as I do?  On a low carb or Keto diet and these are now a denied pleasure?

Fear not! You will love this Reuben’s Twin Burger Recipe as your new go to for a reuben sandwich substitute.

My recipe states to cook your burgers on a grill – you, of course, do not have to do that. Feel free to simply fry them up in a skillet.

I use my indoor George Foreman grill and absolutely love it – but they will be just as delicious when cooked on the stove top.

Reubens Twin Burger Recipe

Ingredients …

Thousand Island Dressing
1/4 cup mayonnaise
2 tbsp sugar-free ketchup 
2 tbsp diced dill pickle
2 tsp Swerve Sweetener
1/2 tsp cumin
1/8 tsp cloves or allspice

Burgers
1 lb ground beef
8 oz sliced corned beef, chopped
1/2 cup sauerkraut, drained
1/2 tsp caraway or fennel seeds
1/2 tsp salt
1/2 tsp black pepper
4 slices Swiss cheese
Additional sliced corned and sauerkraut as desired

Instructions…

Dressing:
1. In a small bowl, combine mayo, ketchup, dill pickle, sweetener, cumin and cloves. Mix well and set aside.

Burgers:
1. Preheat grill to medium high.
2. In a large bowl, combine ground beef, corned beef, sauerkraut, caraway or fennel seeds, salt and pepper. Mix well to combine.
3. Shape into four 1/2-inch thick patties and grill to desired doneness, about 3 minutes per side for medium.
4. At the very end of grilling, top each burger with a slice of Swiss cheese and let melt.5. Top burgers with additional sauerkraut, corned beef and Thousand Island dressing.6. Serve wrapped in lettuce leaves or eat with a knife and fork.
