Like the Spaghetti Casserole that I have made, ‘hubby’ was not at first pleased that I would ‘mess’ with a good thing like Pumpkin Pie! He loves pie and tells me he was not gonna eat this, I should make him a pie ~ again, I told him; “Well, you don’t have to eat this Mock Pumpkin Pie Dessert Cake, but I’m not making Pumpkin Pie too!”

I took this new ‘concoction’, as he called it, to a family Thanksgiving Dinner.  After receiving compliments on how good it looked and my husband says, “Yeah, it looks like s***t, and probably will taste like it too!”  I knew he wasn’t serious, but again I told him he did not have to worry, he wasn’t getting any anyway! LOL.

You aren’t getting any!

After our big & delicious meal and a few cups of coffee later it was time for dessert. Although we were all still full, with a houseful of kids, we all know that dessert is their ‘main course’ and they were ready for it!

So, here goes …

I cut the dessert and plated it … intentionally not serving my husband. He said, “Hey, where’s mine?”  My reply was, “You aren’t getting any, you said you don’t eat s***t!”  Of course, I was joking and did provide him with a small piece at which he scowled, heheheh!

Lastly, I gave myself a small piece and went to the dining room and sat down across from my husband and next to one of my sons-in-law.  My son-in-law looked at my husband, knowing the crap he had giving me about such a concoction and disgrace to Pumpkin Pie and said, “I don’t know about you, but this is absolutely delicious. I’m so darn full, but I’m going to get more!” 

HaHaHaHa! 

It was a hit!!!  And Dave had to admit it!!!  HaHaHaHa!  When I stepped out of the dining room to get more coffee, I heard my husband tell my son-in-law, “This is really good isn’t it?  I’m gonna get more myself.”  Naturally, I had to tease him regarding the whole situation and tell him he couldn’t have anymore, but he did!

Everyone kept saying, “Mmmm, this is good – I think it’s better than Pumpkin Pie!” Now, that’s saying a lot, cuz our family is a huge fan of my homemade pumpkin pie!

He hounded me to make this Mock Pumpkin Pie Dessert Cake for him again … after 6 months I finally gave in. ;o)

Mock Pumpkin Pie Dessert Cake

Ingredients …

CAKE
1 box of yellow cake mix plus required ingredients listed on box

PUMPKIN PIE FILLING
1 @ 15 oz can pumpkin puree
3 eggs
1 cup brown sugar
1-1/4 tsp pumpkin pie spice
1/2 cup evaporated milk *see notes
1/2 cup heavy cream


FROSTING
1 box 4 serving size vanilla instant pudding mix
1-1/4 to 1-1/2 tsp pumpkin pie spice
1 cup cold evaporated milk *see notes
8 ounces whipped topping thawed

Instructions…

*Preheat oven to 350 degrees F.

*Prepare box of cake mix according to package instructions in a large bowl. Pour into a lightly greased 9 x 13-inch cake pan. DO NOT BAKE YET. Set aside while preparing the Pumpkin Pie Filling.

*Rinse or wipe out the cake mix bowl (or use another one if you prefer). Combine the canned pumpkin puree, brown sugar, eggs and spice with a whisk until smooth and mixed together. Gradually and slowly whisk in the evaporated milk and heavy cream. Carefully pour (or spoon) the pumpkin pie filling all over the cake mix. DO NOT MIX THESE TOGETHER, the filling is to be on the top.

*Place cake into the oven, careful not to ‘mix’ it up, and bake for 55-65 minutes or until the center is no longer jiggly, and a toothpick inserted into cake mix comes out clean. The cake might appear to be burnt because it may be a little darker than what you are used to.

*Let completely cool to room temperature.

*When the cake is almost completely cooled, make the frosting. (You don’t want to put the frosting on until the cake is cooled or the frosting will ‘melt’.)

*Put the instant vanilla pudding mix into a large bowl, mix in the pumpkin pie spice. Whisk in the remaining cooled/cold evaporated milk; continue to whisk until pudding starts to thicken. Using a spatula, Gently fold in the thawed whipped topping until it’s completely combined, careful to not ‘overbeat’. Spread on top of the cooled cake.

*Chill for a couple hours and serve … and accept the praises thrown your direction.

Notes:

*As soon as mixed the Pumpkin Pie Filling, place the remaining evaporated milk in the fridge to cool for the frosting. There should be 1 cup remaining – if not, that’s ok … just add enough regular milk to this to make 1 cup total for frosting. You may also just use all milk if you don’t want to use up the remaining evap. milk, it’s whatever you like.

Customize as you please:

Switch it up; You can also use a spice cake mix or another flavor you like! Try switching out the pudding mixes to ‘match’ your cake mix, as long as you think it sounds good with the ‘Pumpkin Pie Filling’ go for it! Adapted From Grandma.

This recipe is an adaptation of a recipe I found online one day while I was hungry. I don’t normally get excited about sweets and desserts, but I thought this sounded really good, so I printed it off. The only name that printed with the recipe was ‘jo’ so I don’t remember where it originally came from; however, I have adapted it to suit my preferences
