With winter upon us it is time to whip out soup recipes, right? If you’re looking for a ‘vegetarian’ style soup, then this Crock Pot Black Bean Soup is for you!

I don’t know about you, but there is nothing better than a warm bowl of soup on a cold winter’s night!  Of course, you are certainly free to add meat if you choose.

Crock Pot Black Bean Soup …

We love any soup that has beans in it! I especially love black beans, their flavor is so hearty and fulfilling. Add the cumin to any mexican style recipe and it is absolute heaven!!

This recipe calls for regular whole kernal corn; however, you can try the mexican style corn purchased at any store in the canned vegetable section. I prefer that corn over the regular because it has a small amount of red/green peppers that add that tiny bit of extra flavor without being overwhelming.

Serve it up with some tortilla chips {or crackers if you prefer} and perhaps add a dollop of sour cream to top it off if you please!

This is a meatless meal ~ however; you may add chicken, ground beef, ground turkey, sausages or any other preferred meat to make a delicious soup as well!

Ingredients …

1 (15 1/2-ounce) can kidney beans drained, rinsed
1 (15 1/2-ounce) can black beans
1 (15 1/2-ounce) can whole kernal corn
1 (14 1/2-ounce) can Mexican or Italian tomato
1 (4-ounce) can mild green chili
1 teaspoon salt

1 teaspoon chili powder
1/2 teaspoon cumin
pepper to taste
1 medium onion finely chopped
2 cloves garlic minced
1 to 2 carrot diced
2 tablespoons chopped cilantro

Instructions…

*Place all ingredients in a slow cooker; cook on high for 4 to 5 hours or on low for 8 to 10 hours. Garnish with 2 tablespoons chopped cilantro.

*If you are adding meat you will need to pre-cook your desired meat first and then add it to the slow cooker with the other ingredients.

Notes

*Serve with tortilla chips or corn chips instead of crackers.
*Top with a dollop of sour cream, if desired.
