Need a simple, easy and no fuss chicken recipe?  You can’t get much easier than you will get with this easy Baked Chicken recipe.

With few ingredients and the simplicity of this delicious chicken, this recipe is a keeper!  You will undoubtedly use this recipe over and over again.

The easiest way is to check your chicken piece with a meat thermometer and ensure the internal temp is 165° and the juices run clear and are not red or pinkish.

Oh, and … leave that skin on if you are using this recipe as part of a low carb meal!!  Here are some reasons why:

*It’s delicious when nice and crunchy, lol!

*The fat is mainly monounsaturated, in the form of oleic acid. Oleic acid, also found in olive oil, is known for beneficial effects on cholesterol.

*Yes, there are also saturated fats in chicken skin. The body does, in fact, need some saturated fat, so enjoy it.

*Fat doesn’t make you fat – it’s all the other crap/carbs that are put in the body which are the cause of obesity.

*Skins and fats satiate the body to prevent both cravings and “survival-mode” hormone secretions.

*However, just like anything else … moderation is always the key – you can’t eat a whole skillet of chicken fat – but you don’t need to remove the skin unless, of course, of you don’t like it.

Baked Chicken Thighs

Baked Chicken Thighs Recipe

Ingredients …

4 chicken thighs
1 tbsp. olive oil

Rub Ingredients:
1 tbsp. garlic powder
2 tsp onion powder
½ tsp. dried rosemary
¼ tsp cayenne pepper
1/8 tsp dried thyme
1/8 tsp dried oregano
1 tsp salt lite
½ tsp black pepper

Instructions…

*Preheat oven to 400°

*Place parchment paper on a baking sheet/cookie pan.

*Rinse & pat dry the chicken thighs. Cut off extra fat as desired.

*Mix the rub ingredients together.

*Rub the chicken thighs with the olive oil.

*Sprinkle the rub mix over both sides of the chicken. (I used an 1/8 tsp to do this & had plenty leftover.)

*Place on parchment paper lined baking sheet.

*Bake for about 45-55 minutes or until juice run clear and skin is crispy. Note: baking times will vary depending on the sizes of your thighs!

Macros for 2 thighs: 341 calories, 25g fat, 1 net carbs, 28g protein.
